Ingredients

  • 2 long fresh red chilies
  • 3 red peppers
  • 4 garlic cloves
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp caraway seeds
  • 1/2 tsp Spanish smoked paprika
  • 1/4 cup chopped coriander (roots, stalks and leafs)
  • Juice of 1 lemon
  • 4 Tbs olive oil

Steps

  1. Roasting Peppers
  2. JACO: Ask tanja how to roast peppers. place peppers in a bowl and cover with (?) to sweat. After sweating (how long?) remove the peppers and remove the blackened skin. Cut open and remove the seeds
  3. Cut the chilies open, remove the seeds
  4. Chop the chilies
  5. Crush garlic cloves
  6. In a dry frying pan, toast the cumin, (ground) coriander caraway until aromatic. Grind the seeds in a mortar and pestle
  7. Combine the chili, peppers, garlic, salt, cumin, ground spices, paprika, olive oil
